I wanted to try something different today, and so I decided to make something out of gala apples. "Varatu" in Tamil, my mother tongue, means stir fry. We ate the varatu with chapathi. Jord is the master of chapathis. He learned how to make chapathis from my mom, and he is so good at it. I can't make chapathis as good as him. He finished kneading the dough before I could take pictures. So I only have a few pictures for the chapathi. I will post step by step photo instructions on a later date. So, here's the recipe for the "Apple Varatu". Makes 4 generous servings.
Step 1: Saute 1 cup of pearl onions, 1 apple finely chopped and 1/2 tsp of minced garlic in 1 tbs of olive oil.
Step 2: Add any vegetable of your choice. I added the Asian stir fry mix vegetables from Costco. Let the vegetables cook.
Step 3: Stir in 2 cups of cubed, cooked potatoes. (I peeled, microwaved and cubed red potatoes).
Step 4: Add the following spices: 1/4 tsp of garam masala, 1 pinch of turmeric, 1 pinch of chilli powder.
Step 5: Stir in 1/2 cup of coconut milk (lite) and turn down the heat to low-medium. Add salt to taste. Cook for 7 more minutes or until vegetables are done to your satisfaction. Serve with chapathis.
