Mango Lassi

"Lassi" is a yogurt-based drink, popular in northern India and has several variations. Mango lassi is a favorite drink in Indian restaurants. Jord and I love Lassi! I have included Lassi as a dessert, although some may not call it that. I call it a dessert, because it has sugar in it and it is very yummy :) I serve Lassi as a cold beverage with the main course.

I don't have very many pictures for it but here is the recipe. (Sorry about the chair in the background in the picture)



-1 cup of fat-free plain yogurt
-1.5 cups of cold water (or you can also use ice cubes. I didn't use any ice and so I can't tell you how much to add)
-2 scoops of vanilla ice cream
-1 cup of chilled mango pulp (Chill the can of mango pulp in the refrigerator or fill up an ice tray with
1 cup of mango pulp and freeze it)
-2 tbs of rose water (Skip the rose water if you don't have any. Rose water does make the Lassi taste better though. You can find rose water at any Asian market for less than $3)
-Brown sugar to taste
-1 pinch of salt

Directions:

Blend the above ingredients together in a blender and pour in glasses. If the drink is too thick then simply add more cold water (or ice) and blend again. Sprinkle ground pistachios on top or any ground nuts or saffron before serving (The nuts are optional). This recipe will make 4-6 servings.
